Potatoes are already on — poke them
5 medium in water. At 15–20 min a fork should slide in. If the centers are hard, give them 3 more minutes. Don’t drain until the skillet stuff is almost ready.
💡 Meanwhile: do steps 1–3 in the skillet. Potatoes wait in hot water just fine.

Split the mushrooms, slice the onion
16 oz pack → use 8 oz / half. Slice onion into half-moons. Trim beans, leave whole or snap in half. Skillet on medium-high with 1–2 Tbsp oil/butter.

Fry mushrooms + onion first
Mushrooms in a single layer. Don’t stir for 2–3 min — let them brown. Then onion in. Salt. Cook until the pan looks dry and browned, not gray and wet. ~8–10 min.
⚠ Don’t dump all 16 oz in. Half pack. Crowded mushrooms steam and taste like wet sponge.

Green beans into that pan
Beans in with the mushrooms. Splash of water (2 Tbsp) and lid 3–4 min if they’re stiff, then lid off so they blister. Salt. They should still snap.

Sauce the pan
Off or low heat: 2 tsp Worcestershire or soy into the skillet, toss. That’s the sauce for the topping. Taste salt. Kill the heat.
💡 Sauce pick: Worcestershire = diner gravy energy (best with mash). Soy = saltier, more mushroom. Chili crisp in the pan if you want heat and crunch. Plain hot sauce goes on the mash later, not in this pan — vinegar vs brown fond.

Drain and mash the potatoes
Keep a splash of cooking water. Mash in the pot with 3 Tbsp butter + ⅓–½ cup milk (or potato water). Salt. Should steam, not soup.
⚠ Don’t dump a cup of milk in at once. Splash, mash, splash.

Serve: mash bed, pan on top
3 bowls. Scoop mash down first. Spoon mushrooms, onion, and beans over. Pan juices too. Optional: 5 shakes hot sauce on the white mash edge only. Don’t stir into paste.
💡 Stuff that’ll save you
5 potatoes vs 6: 5 is right for 3 bowls. A 6th is leftover mash tomorrow, not a 4th serving unless you want it.
Sauce: Worcestershire in the mushroom pan is the match. Hot sauce on the mash edge if you still want recipe-8 heat. Don’t put Tabasco in the mushroom pan — it fights the brown fond.
Too thick mash: splash of potato water. Too thin: mash harder, no more milk.
If mushrooms go gray: heat was too low or the pan was crowded. Next time half the pack, wait before stirring.
